- 250g 1 Grated Pumpkin
- 2 tbsp 1 Ghee
- 2 tbsp 1 Grated paneer
- 200ml 1 Coconut milk
- 2 tbsp 1 Stevia/ Erythritol Adjust quantity for erythritol as it is less sweet
- 4 Chopped Cashews Optional

Instructions
- Take the ghee and melt it in a pan.
- . Add the grated pumpkin and stir in the ghee for about 3-4 minutes.
- Add the coconut milk and let the mixture reduce. It takes about 8-10 minutes. Keep stirring or the pumpkin sticks to the pan. Add the crushed paneer. The paneer gives it more rich texture and also resembles using khoya.
- Add the cardamom powder and mix well for 3-4 minutes.
- 5. Garnish with cashews .

Which stevia can be used for this? The stevia I use, it has a bitter aftertaste. Can you suggest?
Hi Janice. You can use erythritol too. So sweet brand from Amazon
The smell of ghee….cardamom….cashews and the pumpkin makes u wanna chow down the whole thing as soon as its done but wait!!! Take a pic and enjoy the way it looked as soon as its over. Melts in your mouth! A recipe everyone should try 🙂

Can a carrot (gajar) halva be made keto looking at the carbs(including sugar) in a carrot! (100gms of carrot has 10gms carb when sugar is 4.7 gms)
Also while doing that what if I replace coconut milk and paneer with cream (Malai) out of normal full cream Milk?
I am really considering putting in all the effort to make it. hope it is worth it in Keto 😀

Honestly, if you are just starting out. Do not eat carrots as it will be hard to adapt. Better make the gajar halva as a treat after 2 months of proper keto 🙂 You can make dudhi halva instead. that is pretty low carb. Yes, you can use malai ( a.k.a homemade fresh cream) but here paneer was used to give it more volume and the chunky bits tastes as khoa/mawa
