This recipe is a shortcut for those who want to make Keto Chicken Biryani but want to omit the steps of marination and the shiz. Inspiration behind Keto Green Chicken Rice ( Keto Cauliflower recipes Indian ):
I am a die-hard fan of Palak paneer a.k.a Saag paneer and always used to gobble on that with white rice. The flavour of spinach with the spices along with paneer is incredible. This was somewhat related to that feeling. Now, here in Mumbai, we get cheap copycat of Hyderabadi Biryani, which is unusually green unlike the real traditional one.
Why Keto Green Chicken Pulao ( Keto Cauliflower recipes Indian ) :
Firstly, I owe it to the Tony Dhaba wala in Thane, Mumbai. I literally grew up eating this pulao. I owe it to the uncle really. He makes some awesome lip smacking Pulao. Secondly, I am coming up with bunch of recipes with cauliflower rice, just as to make you guys forget white rice and really enjoy this woe.
What to have with the Pulao ?
This is a great combination with Raita- which is a Indian side dish and a twisted coleslaw with yogurt, tomatoes and cucumbers. Wait ! This definitely isn’t coleslaw as you don’t find cabbage in it. Yup, not a coleslaw but tastes like it ? Phew ! ( It is hard educating others the dishes of India, really !!)

- 1 cup spinach
- 0.2 cup/ 2 heaped tbsp coriander/cilantro leaves
- 2 medium green chillies
- 1 tsp grated giger
- 1.5 tbsp Ghee
- 1 medium cinnamon stick
- 2 pods green cardamon and black cardamom
- 3 pepper corns
- 3-4 cloves
- 1 tsp cumin powder
- 1.5 cups grated cauliflower see recipe notes below
- 1 tbsp greek yogurt optional - use 1 tbsp lemon juice instead
- 200 grams chicken with bones
- 2 tbsp chicken broth optional- if not available, use 2 tbsp water
- 3-4 roasted cashews optional for garnish
- 30 grams/ 2 tbsp finely chopped onion

- In a food processor or grinder, grind spinach, coriander, ginger,garlic and chillies and add 2 tbsp water until it forms smooth paste
- In a pan over medium high flame, Melt the ghee. Add the whole spices and give it a good mix until they release aroma.
- Add onion and sautee till translucent. Add the chicken spices, cover it with onions and spices and cover for 8-10minutes.
- Add the green paste along with greek yogurt/ lemon juice and mix well. Cover for 10-12 minutes.
- Add the cumin powder and salt, cover for 7-8 minutes
- Open the lid and let the water evaporate a little, not much but until thick consistency. See the 02:04th minute in the video. Add the grated cauliflower and mix well. Cover for 10 minutes.
- Add the chicken broth(if you don't have, add water instead) and mix well. Cover for 5 minutes.
- Garnish with chopped coriander and roasted cashews.
